The BEST Strawberry cake EVER..from Scratch!

Event/Party Planning is one of my favorite things to do! I can’t even begin to list all the Baby Showers, birthday parties, wedding showers, lingerie showers, and weddings I have planned over the years. Even as a very young woman, I enjoyed planning all sorts of different events. I planned a Baby shower last year and to my dismay, my cake lady had to cancel on my at the last minute! There was No Way I could get another cake in time for the shower. I refused to grab something out of bakery somewhere so I made a phone call. I called my cousin, she is the BEST cook ever because she has, in my opinion, one of the best teachers out there AKA: her mom AKA: My Aunt Ann. I told her I was in desperate need and here she come with the best cake recipe known to man.

After a girl’s night baking session, we had it! The cake was done and it looked beautiful too! A little bit of Icing and a few flowers later, it looked professionally done. The real compliment was the guests who went on and on about how good it was, before they knew it was home made. Seeing several of them coming back for a little more was the best feeling ever! I had pulled off the best cake replacement, with the help of my cousin and this has been my Go To recipe ever since! <3 The cake in the picture is four layers, so I doubled the recipe. The BEST strawberry cake from scratch

This is the BEST strawberry cake I've ever had. This is NOT MY personal recipe, but it has been my favorite by far!

Ingredients
  

  • 2 cups White Sugar
  • 3 oz (1) Package of strawberry flavored Jell-O
  • 1 cup Butter, softened We love Land O Lakes Butter
  • 4 Eggs (room temperature)
  • 2 ¾ cups Sifted Cake Flour Swans Down is a favorite
  • 2 ½ teaspoons Baking powder
  • 1 cup whole milk room temperature
  • 1 tbsp Vanilla Extract
  • ½ cup strawberry puree from frozen sweetened strawberries

Instructions
 

  • Grease and Flour your two 9 inch pans. Preheat the oven to 350 degrees.
  • Cream together the butter, sugar, and dry strawberry gelatin until light and fluffy. Beat in eggs one at a time, mix well after each. Add the baking powder to the flour; stir them into the batter alternately with the milk. Blend in vanilla and strawberry puree. Pour the batter evenly between the two prepared pans.
  • Bake for 25 to 30 minutes, or until a small knife inserted into the center of the cake comes out clean. Make sure to allow the cakes to cool in their pans over a wire rack for a least 10 minutes, before tapping out of the pans.

I have come across so many cake recipes, but this is by far my favorite! This is NOT MY recipe. It has been passed down to me from my cousin.
My normal cake lady had to cancel my cake order last minute for a Baby shower I was hosting, so I broke out this recipe and it was a HUGE hit. I iced it with a very thin layer of home made cream cheese icing, that I added a little of the strawberry puree to, then decorated the cake with flowers, the guests couldn’t tell I didn’t order it. The strawberry puree added the perfect pink tint that matched perfectly with the shower decor!
This recipe is a two layer cake. The cake pictured was Four layers, I doubled the recipe. If you choose to double the recipe, make sure to grab a few wooden dowels. We would love to see your creations!
